How long should your cook
Grilling can seem easy, but without experience, cooking everything from chicken wings to hamburgers can be daunting.
It is important to know cook times and internal temperatures for protein like:
- Beef
- Chicken
- Shrimp
- Vegetables
Remember, cook times may vary with different grills. Use an instant-read thermometer to check food readiness. The higher temperature in our range is the recommendation given by USDA for maximum safety, while the lower is preferred by the Real Simple test kitchen and approved by many food experts. When the food reaches proper internal temperature, remove it from the grill.
The following are guidelines for cooking Chicken:
For boneless chicken
- Cooking time: For 5 to 6 minutes, offer direct heat on each side
- Internal temperature: 160° to 165°
Chicken and turkey cutlets
- Cooking time: For 2 to 3 minutes, offer direct heat per side
- Internal temperature: 160° to 165°
Chicken Wings
- Cooking time: 25 to 30 minutes on indirect heat, covered, and sometimes turned.
- Internal temperature: 165°
Bone-in chicken thighs, breasts, and drumsticks
- Cooking time: Covered indirect heat for 40 to 50 minutes, rotating it occasionally.
- Internal temperature: 160° to 165°
The following are guidelines for beef items:
Flank and skirt
- Cooking time: 4 to 6 minutes on each side under direct heat (for medium-rare)
- Internal temperature: 130° to 145°
Strip and London broil
- Cooking time: 5 to 6 minutes on each side under direct heat (for medium-rare)
- Internal temperature: 130° to 145°
Ribeye or porterhouse
- Cooking time: Cook in an indirect (covered) manner for 8 to 10 minutes after cooking each side directly for 3 to 5 minutes.
- Internal temperature: 130° for medium-rare.
